Breakfast on the Go: Egg White Muffins

My favorite meal of the day is breakfast. I really don’t see how so many people skip this meal everyday! I would like to think I’ve had a positive relationship with food most of my life. When I became more health conscious, making small changes in my food selection began to make big differences.

These egg white muffins make healthy choices so much easier. Instead of always grabbing a bar or some other sugary treat, pop these in the microwave and keep it moving!

What You Need

  • Egg Whites

  • Spinach

  • Ground Turkey (or another choice of meat/protein)

  • Cheese

  • You can add any of your other favorite veggies like peppers & onions

What To Do:

  1. Preheat your oven to 350 degrees

  2. Line a cupcake pan with cupcake liners OR spray a cupcake pan with non stick spray

  3. Add in your meat, veggies, cheese and light seasonings

  4. Pour 1/3 cup of egg whites into liner.

  5. Bake in the oven for 20 minutes or until eggs are fully cooked.

  6. Eat immediately or let cool and refrigerate.
